edamame beans and broccoli simmered gently in a creamy, yellow curry sauce
A yellow Thai curry which is mild and creamy and prepared with lots of delicious vegetables. Edamame beans are the green stage of soybeans i.e. before they mature and are dried. Broccoli, spinach, butternut squash and carrot are all included in this recipe.
Serve in a bowl with a chickpea crispbread.
Serve with jasmine rice and fresh coriander.
